Pastificio Carleschi
Bronze-cut, slow-dried dry pasta made from 100% British-grown organic ancient grains: emmer, spelt and einkorn. Carleschi stone-grinds the grains, extrudes each batch through bronze dies, and dries the pasta for up to 40 hours at low temperature, producing shapes like the Wholegrain "Krivet" Spaghettoni. Launched at Borough Market in 2019 as Britain's first artisan dry pasta producer, it has won seven Great Taste Awards and took Best New Product at the 2021 Great British Food Awards for its Emmer and Fava Bean Sedani Rigati, made with Hodmedod's.
