Small growers need routes to market

A microgreens business can be a very small growing operation supplying some of the most demanding local kitchens.

Its problem is often not producing the crop. It is being found by enough reliable buyers.

Understead links the people growing locally with the restaurants, shops and residents looking for local supply, without taking ownership of the trading relationship.

What grows when you buy locally

A farm shop, butcher, grower or dairy is more than another place to buy something.

These businesses create work, keep practical skills alive, give smaller producers somewhere to sell and keep more economic activity connected to the places where the food is actually grown and made.

But the independent producer rarely has the advertising budget, search authority or convenience infrastructure of a supermarket or national platform.

Understead is trying to narrow that gap, not by asking people to shop locally out of guilt, but by making local options easier to see and easier to use.

Find the people producing around you. Buy from them when it works for you. Help keep more of the economy of your place rooted there.

Some growers also sell directly to residents. Where they do, their collection, delivery or direct-buying details are shown on the listing.

What does it cost?

Local does not automatically mean cheaper, or more expensive. Prices vary by product, quantity, season and business. Where producers publish current prices, Understead shows them so you can compare the real offer rather than rely on assumptions.

Quick answers

How many microgreen growers are there in the UK?

53 microgreen growers currently list on Understead, and more are added each week. Around 6 are near Greater London. Search by postcode to find the growers closest to you and buy from them directly.

What are microgreens, and how are they different from sprouts?

Microgreens are young vegetable and herb plants, grown in soil or a fibre mat and cut just above the roots once the first true leaves appear, usually one to three weeks from sowing. Sprouts are different: germinated seeds grown in water and eaten whole, root and all, within days. Microgreens are grown in the light, cut, and prized for concentrated flavour.

What do microgreens taste like, and which should I try first?

Each tastes like a sharper version of the full-grown plant. Start mild with pea (sweet), sunflower (nutty) or broccoli (fresh and green). For heat, try radish or mustard, which carries a wasabi-like bite. Beetroot is earthy and richly coloured. Mild ones suit salads and sandwiches; the spicy ones cut through rich, fatty dishes.

How do I keep microgreens fresh?

Keep them cold and dry: in the fridge, in a breathable container or their punnet, unwashed until you use them. Most keep five days to a week; sunflower and pea last longest, delicate specialty greens the shortest. If your grower sells a living tray, snip what you need and it'll keep on a windowsill.

How do I use microgreens?

Treat them as a raw finishing touch rather than something to cook, heat wilts them. Scatter mild kinds over salads, sandwiches, eggs, soups and grain bowls, and use spicy ones like radish or mustard to cut through rich food. A pinch on top adds crunch, colour and fresh flavour; they're a garnish that actually earns its place.

Are microgreens more nutritious than full-grown vegetables?

Often, by weight. A 2012 University of Maryland and USDA study found many microgreens held several times the vitamin concentration of their mature counterparts, though the figure varies widely by variety. They're eaten in small amounts, so treat them as a fresh, flavourful addition rather than a supplement, and buy them fresh to get the most from them.
