Daniel and Jodie Simson stalk deer across Sussex farmland and woodland, then bring the carcasses to their home larder for butchery. They sell venison the way their family eats it, high in protein and cooked into everything from spaghetti bolognese to venison Wellington. Working with the Brighton and Hove Food Partnership, they are developing a quarter-venison 'Browsing Box' alongside lamb, goat and beef boxes sourced from conservation grazing animals.
