From Cambridge, Orriss & Son makes small-batch fermented chilli sauces, seasonings and rubs. The core range runs to three: Even Flow, a fruit-driven habanero hot sauce; My Wave, a tangy Piri-Piri style; and Fresh Tendrils, a green jalapeño and nettle sauce. Founder David Underwood, a chef of over twenty years, develops each recipe by hand, and all the sauces are vegan and gluten free.
